Pea and herbs toast

 

These vegan spring pea and herb toasts are bright, fresh, and full of seasonal flavor. Sweet peas, lemon, herbs, and creamy avocado make this recipe simple but satisfying.

It’s perfect for brunch, lunch, or a quick plant-based snack.


Ingredients

  • 4 slices gluten-free or sourdough bread

  • 1 cup peas, fresh or frozen

  • ¼ cup fresh parsley, dill, or scallions

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

  • ½ avocado or ¼ cup hummus

  • Sea salt and black pepper

  • Optional: radishes or microgreens


Instructions

  1. Toast the bread until golden.

  2. Lightly mash peas with olive oil, lemon juice, salt, and pepper.

  3. Spread avocado or hummus over each toast.

  4. Add mashed peas on top.

  5. Finish with herbs, radishes, or microgreens.
