Avocado toast

This vegan avocado toast is fresh, creamy, crunchy, and simple to make. The avocado gives healthy fats, radishes add a crisp bite, and sprouts bring a light, fresh flavor.

It’s perfect for breakfast, brunch, or a quick plant-based lunch when you want something easy but still nourishing.

Ingredients

  • 2 slices gluten-free or sourdough bread

  • 1 ripe avocado

  • 1 teaspoon lemon juice

  • 1 teaspoon olive oil

  • 3–4 radishes, thinly sliced

  • ¼ cup sprouts or microgreens

  • 1 tablespoon fresh parsley, dill, or scallions

  • Sea salt and black pepper

  • Optional: red pepper flakes

  • Optional: pumpkin seeds or hemp seeds


Instructions

  1. Toast the bread until golden and crisp.

  2. Mash avocado with lemon juice, olive oil, sea salt, and black pepper.

  3. Spread the avocado mixture over the toast.

  4. Add sliced radishes on top.

  5. Finish with sprouts, herbs, and optional seeds.

  6. Serve immediately while the toast is fresh and crunchy.
