Winter beet salad

This winter beet salad is bright, earthy, and refreshing. Beets pair beautifully with citrus, greens, walnuts, and a simple olive oil dressing.

It’s a great recipe when you want something light but still deeply nourishing during the colder months.


Ingredients

  • 2 medium beets, cooked and sliced

  • 3 cups arugula or mixed greens

  • 1 blood orange or clementine, sliced

  • ¼ cup walnuts

  • 2 tablespoons pomegranate seeds

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice or orange juice

  • Sea salt and black pepper

  • Optional: goat cheese or dairy-free cheese


Instructions

  1. Add greens to a plate or bowl.

  2. Top with sliced beets and citrus.

  3. Add walnuts and pomegranate seeds.

  4. Drizzle with olive oil and lemon or orange juice.

  5. Season with salt and pepper.

  6. Serve fresh.
